Nutmeat & Green Beans

Ingredients
- ¼ cup of vegetable oil
- 500 grams string beans, ends cut off
- 1 tablespoon crushed garlic
- 1 teaspoon crushed ginger
- 3 sliced spring onion, including stalks
- 40 grams shitake mushrooms * see notes
- 415 gram can of nutmeat (Vegie Delights)
- 2 freshly sliced red chilies, seeds removed (more if desired)
- 2 tablespoon soy sauce
- 1 tablespoon rice wine
- Salt & pepper to season
Instructions
- Soak shitake mushrooms according to packet directions. Drain & set aside
- Process the nutmeat through a food processor until crumbly. Do not puree
- In a large wok or pan, heat the oil on high & fry the beans for a few minutes. Remove with a slotted spoon & set to one side
- In the same wok/pan add the garlic, ginger & spring onions & fry until spring onions start to soften slightly
- Add mushrooms, nutmeat & warm through
- Stir through chilies
- Re-add beans back to wok/pan & toss to combine everything
- Add the soy sauce & rice wine. Season to taste & serve immediately
Notes
Serves 2 or 4 if served with rice.
Alternatively, pan fry a large handful of sliced fresh mushrooms.
