Battered Mushroom Sweet & Sour

Ingredients
- 30 battered mushrooms
- 2 tablespoons oil
- 1 green capsicum chopped
- 2 celery stalks sliced
- 1 onion, cut into crests
- 2 carrots sliced
- 2 teaspoons crushed garlic
- 1 cup castor sugar
- 1 cup white vinegar
- 2 tablespoons soy sauce
- 4 tablespoons corn flour
- 425g pineapple pieces (drained)
Instructions
- In a jug combine sugar, vinegar, soy sauce & 2 cups of water. Stir until sugar is dissolved & set aside
- Heat oil in a wok & add capsicum, celery, onion, carrots & garlic. Cook for 3 minutes
- Stir though liquid with dissolved sugar
- Combine corn flour with a little water in a separate cup & create a runny paste
- Acting quickly, stir through the cornflour paste
- Add mushrooms & pineapple & warm through. Mixing occasionally
- Serve immediately on a bed of rice
