Tofu, Pea & Tomato Curry

Ingredients
- 250g firm tofu, cut into cubes
- 4 ripe tomatoes, roughly chopped
- 1 onion, finely chopped
- 1 teaspoon crushed garlic
- 1 teaspoon crushed ginger
- 1 ½ cups frozen peas
- 1 ½ cups vegetable stock
- 2 tablespoons olive oil
- 2 teaspoons garam masala
- ½ teaspoon turmeric
- Pinch of salt
Instructions
- Fry the tofu in the oil until golden. Remove & set aside on absorbent paper
- Using the same pan fry the onion, garlic & ginger for about 2-3 minutes (add more oil if necessary)
- Stir in the garam masala & turmeric, then add the tomatoes & stock & simmer for 10 minutes or until thickened
- Return tofu to the pan, add the peas & heat through. Serve with rice
