Tofu, Pea & Tomato Curry

Ingredients
  • 250g firm tofu, cut into cubes
  • 4 ripe tomatoes, roughly chopped
  • 1 onion, finely chopped
  • 1 teaspoon crushed garlic
  • 1 teaspoon crushed ginger
  • 1 ½ cups frozen peas
  • 1 ½ cups vegetable stock
  • 2 tablespoons olive oil
  • 2 teaspoons garam masala
  • ½ teaspoon turmeric
  • Pinch of salt
Instructions
  1. Fry the tofu in the oil until golden. Remove & set aside on absorbent paper
  2. Using the same pan fry the onion, garlic & ginger for about 2-3 minutes (add more oil if necessary)
  3. Stir in the garam masala & turmeric, then add the tomatoes & stock & simmer for 10 minutes or until thickened
  4. Return tofu to the pan, add the peas & heat through. Serve with rice
