Silverbeet & Mint Pesto

Ingredients
- 1 bunch of silverbeet
- 1 handful of fresh mint leaves
- ¼ cup raw cashews
- Small cube of firm tofu (about 40g)
- 1 teaspoon caster sugar
- 1 tablespoon Dijon mustard
- 2 tablespoons red wine vinegar
Instructions
- Blend all ingredients in a blender until smooth.
