Vegan Coconut Slice

Ingredients
- 2 cups of plain flour
- 1 cup caster sugar
- 125g of non-dairy margarine
- 9 tablespoons aquafaba (3 tablespoons is equivalent to 1 egg)
- 1 teaspoon vanilla essence
- ¾ cup of strawberry jam (you could use any flavour you fancy)
- 2 cups of desiccated coconut
Instructions
- Preheat oven to 180°C. Line a lamington pan (24cmx30cm)
- In a large bowl, add flour, ½ cup caster sugar & margarine. Rub in with fingertips until you have a breadcrumb consistency
- Add 3 tablespoons aquafaba & vanilla essence. Knead to form a dough
- Press dough into base of pan & bake for 15-20 minutes, or until a light golden brown
- Spread jam over warm base – set aside
- Whisk the remaining 6 tablespoons of aquafaba & ½ cup caster sugar together until combined. Stir through coconut
- Spread over jam & bake for 25 minutes or until golden
- Cool completely in pan. Cut in pieces to serve.
