One Pot Soup

Ingredients
- Olive oil
- 250g vegan bacon 1 chopped onion
- 2 teaspoons crushed garlic
- 400g can of diced tomato
- 400g can of beans of choice (butter bean, kidney beans or even chickpeas)
- 1 litre of vegetable stock
- ¼ cup tomato paste
- 2 diced zucchini’s
- 1 small handful of spaghetti broken into pieces
- Salt & pepper to taste
- Fresh basil to garnish
Instructions
- In a large pot fry up onion, garlic & bacon for a few minutes
- Add tomatoes, beans, stock, tomato paste & zucchini & bring to a boil (salt & pepper to taste)
- Reduce heat to low & add spaghetti, simmer until cooked
- Garnish with fresh basil
