Fried cauliflower in a barbecue sauce

Ingredients
- 1 large cauliflower broken into florets
- 1 ½ cups of plain flour
- Salt and pepper for seasoning
- Oil for frying
Sauce:
- 1 cup of tomato sauce
- ½ cup vegetable stock
- 2 tablespoons liquid smoke
- ½ teaspoon Dijon mustard
- ¼ cup raw sugar
- 1 teaspoon molasses (optional)
- ½ teaspoon onion powder
Instructions
- In a large bowl whisk flour, salt and pepper with water to make a batter
- Toss through cauliflower and fry in a large fry pan in batches. Keep cooked batches warm in the oven
- Once all cauliflower is cooked and staying warm, clean the fry pan to use for sauce
- Add all the sauce ingredients and whisk and heat through
- Toss through cauliflower and serve immediately with mashed potato and vegetables
