Fried cauliflower in a barbecue sauce

Ingredients
  • 1 large cauliflower broken into florets
  • 1 ½ cups of plain flour
  • Salt and pepper for seasoning
  • Oil for frying
Sauce:
  • 1 cup of tomato sauce
  • ½ cup vegetable stock
  • 2 tablespoons liquid smoke
  • ½ teaspoon Dijon mustard
  • ¼ cup raw sugar
  • 1 teaspoon molasses (optional)
  • ½ teaspoon onion powder
Instructions
  1. In a large bowl whisk flour, salt and pepper with water to make a batter
  2. Toss through cauliflower and fry in a large fry pan in batches. Keep cooked batches warm in the oven
  3. Once all cauliflower is cooked and staying warm, clean the fry pan to use for sauce
  4. Add all the sauce ingredients and whisk and heat through
  5. Toss through cauliflower and serve immediately with mashed potato and vegetables
