Banana and Caramel Layered Sundae

Ingredients
Layer 1:
- 6 frozen bananas (peeled before frozen)
Layer 2 (caramel):
- ¼ cup raw sugar
- 1 tablespoons of malt extract (probably a little more as trying to measure out 1 tablespoons can be a challenge)
- 1 ½ tablespoons water
- ¼ teaspoon salt
- ½ cup of soy milk
- 2 tablespoons cornstarch
- ½ teaspoon vanilla essence
Layer 3:
- sprinkle of rice bubbles
Layer 4 ('Ice Magic'):
- 1 ¼ cup of chocolate for melting
- ½ cup melted coconut oil
Instructions
Layer 1:
- Put through a food processor until an ice cream consistency
Layer 2:
- To make the caramel, add sugar, malt extract, water & salt into a saucepan. Heat until it starts to bubble. Move to one side and mix milk, cornstarch, salt & vanilla essence in a small bowl. Add to saucepan & return to heat. Using a whisk, continue to mix until caramel is nice and thick. Sit to one side
Layer 3:
- Sprinkle rice bubbles
Layer 4:
- Melt chocolate & combine with coconut oil. Pour directly over ice cream. It will harden within seconds. This can be kept in a jar in the fridge & microwave to liquefy again at a later date
- Build the layers in your favourite serving glass or dish
