Banana and Caramel Layered Sundae

Author:
Recipe type: Desserts
Ingredients
Layer 1:
  • 6 frozen bananas (peeled before frozen)
Layer 2 (caramel):
  • ¼ cup raw sugar
  • 1 tablespoons of malt extract (probably a little more as trying to measure out 1 tablespoons can be a challenge)
  • 1 ½ tablespoons water
  • ¼ teaspoon salt
  • ½ cup of soy milk
  • 2 tablespoons cornstarch
  • ½ teaspoon vanilla essence
Layer 3:
  • sprinkle of rice bubbles
Layer 4 ('Ice Magic'):
  • 1 ¼ cup of chocolate for melting
  • ½ cup melted coconut oil
Instructions
Layer 1:
  1. Put through a food processor until an ice cream consistency
Layer 2:
  1. To make the caramel, add sugar, malt extract, water & salt into a saucepan. Heat until it starts to bubble. Move to one side and mix milk, cornstarch, salt & vanilla essence in a small bowl. Add to saucepan & return to heat. Using a whisk, continue to mix until caramel is nice and thick. Sit to one side
Layer 3:
  1. Sprinkle rice bubbles
Layer 4:
  1. Melt chocolate & combine with coconut oil. Pour directly over ice cream. It will harden within seconds. This can be kept in a jar in the fridge & microwave to liquefy again at a later date
  2. Build the layers in your favourite serving glass or dish
