Vegan Swedish Meatballs

Serves: 16 meatballs
Ingredients
- 415 g can of nutmeat (Vegie delights)
- 140 g apple puree
- 1 tablespoon of dry mixed herbs
- ½ cup dry breadcrumbs
- Salt & pepper to season
- Oil for frying
Gravy:
- 2 tablespoons margarine
- 2 tablespoons plain flour
- 1 ½ cups of vegetable stock
- 1 teaspoon Worcestershire sauce
Instructions
Meatballs:
- Put nutmeat through a food processor to create a mince
- Tip into large bowl & add all other ingredients & use your hands to combine
- Roll small portions in your hand to create meatballs
- Add a small amount of oil to a fry pan & gently toss the meatballs around to brown them. Remove from fry pan & sit to one side
- Make sauce
Gravy:
- Using the same fry pan, melt the margarine on a low heat & whisk through the flour
- Add the stock & whisk. Scrape the bottom of the fry pan for meatball remnants
- Add Worcestershire sauce & stir through
- Once thickened, return meatballs to the fry pan, heat through & ensure they are well coated
- Serve with mashed potatoes and greens
