Chilli Mushrooms in a rich gravy

Ingredients
  • 250 grams button mushrooms, chopped (small but not fine)
  • 1 large green capsicum, finely sliced
  • 1 large fennel bulb, finely sliced
  • 1 tablespoon crushed ginger
  • 1 tablespoon crushed garlic
  • 2-3 chillies, finely chopped (or too taste) or 2 tsp of dried chilli flakes
  • 2 tablespoon corn flour dissolved in a small amount of water to create a slury
  • 1 tablespoon soya sauce
  • 1 tablespoon balsamic vinegar
  • 1.5 cups vegetable stock
  • 1 tablespoon tom yum paste
  • ½ teaspoon pepper
  • 2 tablespoon coconut oil
  • Salt to taste
Instructions
  1. Heat oil in wok
  2. Add fennel & stir fry until it starts to brown
  3. Add ginger, garlic & chillies & stir through
  4. Add capsicum & stir through
  5. Add mushrooms & stir through until they start to leave liquid
  6. Add soy sauce, vinegar, salt & pepper
  7. Add stock & allow to simmer then stir in cornflour mixture
  8. Remove from heat once the sauce starts to thicken
  9. Serve with rice & a cooling dish of diced cucumber & tomato
