Chilli Mushrooms in a rich gravy

Ingredients
- 250 grams button mushrooms, chopped (small but not fine)
- 1 large green capsicum, finely sliced
- 1 large fennel bulb, finely sliced
- 1 tablespoon crushed ginger
- 1 tablespoon crushed garlic
- 2-3 chillies, finely chopped (or too taste) or 2 tsp of dried chilli flakes
- 2 tablespoon corn flour dissolved in a small amount of water to create a slury
- 1 tablespoon soya sauce
- 1 tablespoon balsamic vinegar
- 1.5 cups vegetable stock
- 1 tablespoon tom yum paste
- ½ teaspoon pepper
- 2 tablespoon coconut oil
- Salt to taste
Instructions
- Heat oil in wok
- Add fennel & stir fry until it starts to brown
- Add ginger, garlic & chillies & stir through
- Add capsicum & stir through
- Add mushrooms & stir through until they start to leave liquid
- Add soy sauce, vinegar, salt & pepper
- Add stock & allow to simmer then stir in cornflour mixture
- Remove from heat once the sauce starts to thicken
- Serve with rice & a cooling dish of diced cucumber & tomato
