Vegan Garlicky Prawns

Ingredients
- 250 grams penne – cooked to packet instructions
- 3 + 2 tablespoons vegan table spread
- 3 heaped teaspoons crushed garlic
- 250 grams vegan prawns
- 3 tablespoons chopped parsley
- 2 tablespoons plain flour
- ¾ cup soy milk (or any non-dairy milk)
- ¼ vegetable stock
- 1 ¼ cup grated vegan mozzarella
- 2 tomatoes roughly chopped
- Salt & Cracked Pepper to season
- Paprika to garnish
Instructions
- Preheat oven to 180°C
- In a large oven proof skillet melt 3 tablespoons of table spread with garlic & parsley
- Add prawns & cook until prawns are warmed through. Season with salt & pepper
- Transfer prawns to a plate & set to one side leaving juices in the skillet
- Add 2 tablespoons table spread to skillet, melt & add flour & whisk through
- Add soy milk & vegetable stock & whisk until creamy. Season with salt & pepper to taste
- Return prawns to skillet, add tomatoes & cooked penne & toss to combine
- Sprinkle with remaining ¼ cup of vegan mozzarella, sprinkle with paprika & bake until cheese has melted & golden
