Vegan No-Bake Oat Cookies

Ingredients
- ½ cup coconut oil (see note)
- 2 cups caster sugar
- ½ cup non-dairy milk
- 4 tablespoons cocoa
- Pinch of salt
- ½ cup peanut butter
- 2 teaspoons vanilla essence
- 3 cups rolled oats
- ¾ cup peanuts (optional)
- ¾ cup sultanas (optional)
Instructions
- Add the coconut oil, sugar, milk, cocoa & salt to a large saucepan (all ingredients will end up in this saucepan)
- Bring to a boil & boil rapidly for 1 minute – remove from heat
- Stir in peanut butter & vanilla essence until smooth
- Add oats, peanuts & sultanas. Mix to combine
- Dollop a tablespoon of the mixture onto a baking tray lined with parchment paper
- Place in the fridge to cool & set
- Once set, move into air tight container & keep in the fridge. Graze at your leisure
Notes
I use deodorised coconut oil because the flavour is very mild
