Nut bites

Ingredients
- 2 cups of almonds
- ½ cup sunflower seeds
- ½ cup pumpkin seeds (pepitas)
- ¼ cup pine nuts
- 2 tablespoons chia seeds
- 3 tablespoons rice malt
- 1 tablespoon molasses
- 2 teaspoons ground cinnamon
- 1 teaspoon minced ginger
Instructions
- Preheat oven to 175°C & line a lamington tray (24cmx30cm)
- Mix the nuts & seeds in a large bowl
- In a separate bowl combine the rice malt, molasses, cinnamon & ginger
- Toss the wet mixture through the seed mix to combine & coat well
- Spread the mix evenly over the prepared pan & bake for 20 minutes (it will still be wet & sticky to touch)
- Place on a cooling rack to cool & solidify
- Using a sharp knife, cut into bite sized squares & store in an airtight container
