Clean-Out-the-Vegie-Crisper Curry

Ingredients
- 2-3 tablespoon sesame oil
- 1 large onion cut into thin crests
- 4 teaspoons crushed garlic
- 1 tablespoon freshly grated ginger
- 1 small zucchini, diced
- 1 carrot, peeled & diced
- 1 -2 tablespoons curry powder (depending on taste)
- 4 tomatoes, diced
- 1 green capsicum, sliced
- 800 ml coconut milk
- 1 cup vegetable stock
- Salt & pepper to taste
- Chilli flakes to serve
Instructions
- Heat sesame oil in a large fry pan with high sides
- Add onion, garlic, ginger, carrot, zucchini & salt & pepper. Stir frequently until softened – about 5 minutes
- Add curry powder, vegetable stock, coconut milk and simmer for 10-15 minutes
- Add capsicum & tomatoes and simmer for a further 5 minutes. Do not overcook. (Add extra salt & pepper if needed)
- Serve over rice, garnish with chilli flakes
