Vegan prawns with fetta

Ingredients
  • 6 tomatoes, roughly chopped
  • 2-3 tablespoons olive oil
  • 2 small onions, finely chopped
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon dried chilli flakes
  • ¼ cup white wine
  • ¼ cup tomato paste
  • 1 teaspoon sugar
  • 1 tablespoon dried oregano
  • 1 tablespoon freshly chopped parsley
  • Vegan prawns (purchased from Global Green Vegetarian Food – Victoria, Australia)
  • Vegan fetta (recipe in notes – very easy!)
Instructions
  1. Heat oil in a high sided fry pan. Add, tomatoes, onion & garlic & fry until soft
  2. Add chilli, wine & tomato paste. Stir through
  3. Mix in sugar, oregano & parsley
  4. Heat through vegan prawns, serve on a bed of pasta & top with fetta
