Ingredients
- 4 tablespoons olive oil
- 50 grams margarine
- 500 gram firm tofu – drained & cut into small cubes
- 2 tablespoons crushed ginger
- 2 teaspoons crushed garlic
- 3 teaspoons coriander powder
- 3 teaspoons cumin powder
- 1 teaspoon cardamon powder
- ½ teaspoon all spice
- ½ teaspoon chilli powder
- 4 tablespoons tomato paste
- 1 ½ cups passata
- 400 ml coconut cream
Instructions
- In a large, high sided fry pan heat the oil & margarine until melted over a medium to high heat
- Add garlic & ginger & fry for a minute or two
- Toss in tofu & heat through
- Add coriander, cumin, cardamon, all spice & chilli powder & cook for another minute.
- Add tomato paste, passata & coconut cream. Scrape sediment off the bottom of the pan
- Stir to combine & simmer, uncovered for 10 minutes
- Serve on a bed of rice
