Ingredients
  • 4 tablespoons olive oil
  • 50 grams margarine
  • 500 gram firm tofu – drained & cut into small cubes
  • 2 tablespoons crushed ginger
  • 2 teaspoons crushed garlic
  • 3 teaspoons coriander powder
  • 3 teaspoons cumin powder
  • 1 teaspoon cardamon powder
  • ½ teaspoon all spice
  • ½ teaspoon chilli powder
  • 4 tablespoons tomato paste
  • 1 ½ cups passata
  • 400 ml coconut cream
Instructions
  1. In a large, high sided fry pan heat the oil & margarine until melted over a medium to high heat
  2. Add garlic & ginger & fry for a minute or two
  3. Toss in tofu & heat through
  4. Add coriander, cumin, cardamon, all spice & chilli powder & cook for another minute.
  5. Add tomato paste, passata & coconut cream. Scrape sediment off the bottom of the pan
  6. Stir to combine & simmer, uncovered for 10 minutes
  7. Serve on a bed of rice
