Vegan prawns with fetta

Ingredients
- 6 tomatoes, roughly chopped
- 2-3 tablespoons olive oil
- 2 small onions, finely chopped
- 2 garlic cloves, thinly sliced
- 1 teaspoon dried chilli flakes
- ¼ cup white wine
- ¼ cup tomato paste
- 1 teaspoon sugar
- 1 tablespoon dried oregano
- 1 tablespoon freshly chopped parsley
- Vegan prawns (purchased from Global Green Vegetarian Food – Victoria, Australia)
- Vegan fetta (recipe in notes – very easy!)
Instructions
- Heat oil in a high sided fry pan. Add, tomatoes, onion & garlic & fry until soft
- Add chilli, wine & tomato paste. Stir through
- Mix in sugar, oregano & parsley
- Heat through vegan prawns, serve on a bed of pasta & top with fetta
