Peppermint Pancakes

Ingredients
- 1 cup self-raising flour
- 1 cup plain flour
- ¼ cup caster sugar
- 2 ½ cups of non-dairy milk
- 2 handfuls of fresh spinach
- 1 teaspoon peppermint essence
- 1 handful of choc-chips or to taste
Instructions
- Sift flour & caster sugar in a large bowl
- Blend milk, spinach & essence until smooth in a high speed blender
- Add liquid to flour mix & whisk until combined
- Spoon a ladle full of mixture onto a pre-heated, greased fry pan over a medium to high heat
- Sprinkle with choc-chips
- Flip, cook & serve with non-dairy ice-cream, maple syrup &/or fruit
