Coconut cupcakes

Ingredients
Cupcakes:
- 1 cup plain flour
- ½ teaspoons baking powder
- ½ teaspoon bi-carb soda
- ¼ teaspoon salt
- ¼ cup canola oil
- 1 cup full coconut milk
- ⅔ cup sugar
- 1 teaspoon vanilla essence
- 1 cup desiccated coconut
Coconut dream icing:
- 2 tablespoons margarine (I use nuttelex)
- 2 tablespoons coconut milk
- ½ teaspoon vanilla essence
- 1 cup icing sugar
- ½ cup desiccated coconut
Instructions
Cupcakes:
- Preheat oven to 180oC. Line a muffin tray
- Sift flour, baking powder, bi-carb soda & salt into a large bowl
- Add all other ingredients & combine using electric beaters
- Fill muffins tins to ⅔ full
- Bake for 20 minutes until slightly brown. Cool on a rack
Coconut dream icing:
- Using electric beaters, mix all ingredients until well combined
- Make sure muffins are totally cool before icing
