Coconut cupcakes

Ingredients
Cupcakes:
  • 1 cup plain flour
  • ½ teaspoons baking powder
  • ½ teaspoon bi-carb soda
  • ¼ teaspoon salt
  • ¼ cup canola oil
  • 1 cup full coconut milk
  • ⅔ cup sugar
  • 1 teaspoon vanilla essence
  • 1 cup desiccated coconut
Coconut dream icing:
  • 2 tablespoons margarine (I use nuttelex)
  • 2 tablespoons coconut milk
  • ½ teaspoon vanilla essence
  • 1 cup icing sugar
  • ½ cup desiccated coconut
Instructions
Cupcakes:
  1. Preheat oven to 180oC. Line a muffin tray
  2. Sift flour, baking powder, bi-carb soda & salt into a large bowl
  3. Add all other ingredients & combine using electric beaters
  4. Fill muffins tins to ⅔ full
  5. Bake for 20 minutes until slightly brown. Cool on a rack
Coconut dream icing:
  1. Using electric beaters, mix all ingredients until well combined
  2. Make sure muffins are totally cool before icing
