Jaffa Bundt Cake

Ingredients
- 100g non-dairy choc chips
- 1 orange, quartered, cored and seeds removed
- 1 cup caster sugar
- 125g melted non-dairy margarine
- ½ cup apple puree (120g)
- 1 ¼ cups self-raising flour
To ice (optional)
- 90g non-dairy chocolate
- ¼ cup coconut cream
Instructions
- Preheat oven to 170˚C and grease a Bundt cake tin
- In a food processor add the choc chips, orange, caster sugar, margarine and apple puree and process until there are no chunks of orange left (this won't take long)
- Add self-raising flour and process briefly until just combined
- Pour into prepared Bundt tin and bake for 40-45 minutes or until a skewer comes out clean
To ice (optional)
- Allow cake to cool completely
- Combine chocolate and coconut cream in a microwave-safe bowl and microwave in 10 second bursts and stir until smooth and combined
- Splash onto cake and streak downwards
- Allow to sit to set
