Baked Tofu with tomatoes and jalapenos

Ingredients
  • 1 block of cubed and baked firm tofu (directions below)
  • ¼ cup olive oil
  • ½ teaspoon dried chilli flakes
  • 3 teaspoons crushed garlic
  • 3 large tomatoes, chopped
  • 3 slices of jalapeno from a jar, chopped
  • ¼ cup vegetable stock
  • ½ cup of fresh basil, chopped
  • 2 tablespoons lemon juice
  • ½ teaspoon fresh lemon zest
  • Salt & pepper to taste
Instructions
Baked tofu
  1. Press excess liquid out of tofu and cut into cubes
  2. Place on an oiled baking tray and toss to coat
  3. Sprinkle with salt and pepper and bake at 180˚C for 20 minutes or until golden. Toss during cooking process
Bringing it together
  1. Heat olive oil in a fry pan & toss through chilli flakes & garlic
  2. Add tomato & jalapenos, stirring until soft
  3. Add stock & bring to a simmer
  4. Stir in basil, lemon juice, zest, and salt & pepper & turn heat to low
  5. Toss through tofu and serve on mashed potato with a side of greens
