Baked Tofu with tomatoes and jalapenos

Ingredients
- 1 block of cubed and baked firm tofu (directions below)
- ¼ cup olive oil
- ½ teaspoon dried chilli flakes
- 3 teaspoons crushed garlic
- 3 large tomatoes, chopped
- 3 slices of jalapeno from a jar, chopped
- ¼ cup vegetable stock
- ½ cup of fresh basil, chopped
- 2 tablespoons lemon juice
- ½ teaspoon fresh lemon zest
- Salt & pepper to taste
Instructions
Baked tofu
- Press excess liquid out of tofu and cut into cubes
- Place on an oiled baking tray and toss to coat
- Sprinkle with salt and pepper and bake at 180˚C for 20 minutes or until golden. Toss during cooking process
Bringing it together
- Heat olive oil in a fry pan & toss through chilli flakes & garlic
- Add tomato & jalapenos, stirring until soft
- Add stock & bring to a simmer
- Stir in basil, lemon juice, zest, and salt & pepper & turn heat to low
- Toss through tofu and serve on mashed potato with a side of greens
