Blueberry, Banana and Yoghurt Muffins

Ingredients
- 1 over-ripe banana, mashed
- ⅓ cup non-dairy milk
- ⅔ cup of plain non-dairy yoghurt
- ¼ cup rice malt
- 1 teaspoon vanilla essence
- 1 ¾ cups of plain flour
- ¼ cup caster sugar
- 2 ½ teaspoons of baking powder
- ½ teaspoon salt
- ¾ cup of frozen blueberries
Instructions
- Grease 12 muffin cup tray and preheat oven to 205°C
- In a large bowl whisk together the banana, milk, yoghurt, rice malt and vanilla essence
- Add flour, sugar, baking powder and salt. Whisk to make a batter
- Gently stir through blueberries
- Divide batter into muffin trays and bake for 18 minutes. Cool on a wire rack
