Blueberry, Banana and Yoghurt Muffins

Ingredients
  • 1 over-ripe banana, mashed
  • ⅓ cup non-dairy milk
  • ⅔ cup of plain non-dairy yoghurt
  • ¼ cup rice malt
  • 1 teaspoon vanilla essence
  • 1 ¾ cups of plain flour
  • ¼ cup caster sugar
  • 2 ½ teaspoons of baking powder
  • ½ teaspoon salt
  • ¾ cup of frozen blueberries
Instructions
  1. Grease 12 muffin cup tray and preheat oven to 205°C
  2. In a large bowl whisk together the banana, milk, yoghurt, rice malt and vanilla essence
  3. Add flour, sugar, baking powder and salt. Whisk to make a batter
  4. Gently stir through blueberries
  5. Divide batter into muffin trays and bake for 18 minutes. Cool on a wire rack
